- Egg yolk75 g
- Sugar45 g
- Vanilla essence to taste
- Weighing the ingredients is important for the cream to have a good texture.
- Mix all ingredients gently (do not beat)
- Place in dish or glass molds (do not use metal ones because of the gratin)
- Bake in a bain-marie in a low oven (preheated) for about 40 minutes (until the coat starts to brown)
- After baking, leave it in the fridge
- When serving, sprinkle sugar using a sieve and use a blowtorch to melt the sugar.
- Repeat the operation to make the cone very hard.
