- Pasta of your choice300 g
- Olive Oil100 ml
- Minced garlic cloves5 unit(s)
- Salt to taste
- Parsley to taste
- Calabrian pepper to taste
- Cook the pasta in salted water according to the instructions on the package, but remove it from cooking 1 minute before the indicated time. Reserve.
- Also reserve some of the pasta cooking water.
- In another pan, heat the oil and fry the garlic for 1 minute.
- Add the pasta with some of the cooking water and stir well for 1 minute.
- Season with salt, pepper and parsley.

- The cooking water is important as it is rich in starch, helping the oil to stick to the dough.
