- Xylitol1 cup
- Coconut oil in liquid state2 tablespoon
- Hydrated and chopped apricots150 g
- Dried Cranberries60 g
- Oat Flour1 cup
- Chopped walnuts60 g
- Orange zest1 tablespoon
- Vanilla Extract1 coffee spoon
- Ground cinnamon1 coffee spoon
- Pinch of salt to taste
- Baking powder1 tablespoon
- Using a whisk or fork, beat the eggs until foamy. Add the xylitol and stir well until it dissolves. Then gradually add the other ingredients, observing the order of the list above and mixing very well. Pour the dough into a greased or silicone form. Bake in a preheated oven at 180 degrees for 40 minutes. Tip: before chopping the apricot, soak it in water for 15 minutes.
