  • Oil (corn or compost)1 l
  • Green olive with pit200 g
  • Black olive with pit200 g
  • Garlic head1 unit(s)
  • Rosemary sprig1 unit(s)
  • Bay leaves4 unit(s)
  1. Chop the green and black olives until the seeds
  2. Crush the garlic cloves, without crushing them, just to leave an opening
  3. Reserve everything in a sterilized glass container.
  4. Add the rosemary sprig and bay leaves
  5. Cover the entire contents with oil
  6. Cover airtight and let it rest for at least 20 days (ideally 30) in a mild place without sunlight
  7. Transfer the oil to another container leaving the olives, garlic, bay leaves and rosemary
  8. Your oil is ready to use
  9. Other seasonings such as pepper, onion and other condiments can be used
  10. Olives, garlic, bay leaves and rosemary do not need to be discarded, they can be used in other recipes such as soups, broths and beans
