- Whole or semi-skimmed milk1 cup
- Ripe purple pitaya1/2 unit(s)
- Demerara sugar or xylitol sweetener1 tablespoon
- Wheat Flour1 cup
- Wheat Flour1/4 cup
- Eggs2 unit(s)
- Melted butter2 tablespoon
- Baking Powder3 teaspoon
- Organic Honey (honey from Gerais) for pancake syrup to taste
- Place the milk, eggs, melted butter and purple pitaya in a blender and beat well.
- Add the sugar and flour and beat again, gradually add the flour
- Lastly add the baking powder and beat quickly
- Preheat a non-stick frying pan and add some of the batter (use a ladle)
- Wait for it to brown and turn it to the side, cook for a few more seconds and that's it.
- Repeat the process until all the pancakes are done.
- Serve with Organic Honey 🍯😋
