- Raw and unsalted cashews, soaked1/2 cup
- Tahini3 tablespoon
- Unflavored Coconut Oil1/3 cup
- Water1/3 cup
- Cachaça or white wine3 tablespoon
- Sugar for sprinkling to taste
- Cinnamon for sprinkling to taste
- Salt to taste
- Lemon juice1 tablespoon
- Start by peeling the bananas and cutting them in half lengthwise. Drizzle with half a tablespoon of lemon juice and set aside.
- In a blender or manual mixer, beat the soaked chestnuts for at least 4 hours with the tahini, salt, coconut oil, the other half of the lemon juice and water until obtaining a dense and homogeneous cream.
- In a non-stick frying pan, add a strand of coconut oil, add the bananas and cachaça and fry until golden. Reserve.
- Place the fried bananas on an oven-safe platter, sprinkle with sugar and cinnamon to taste, cover with the chestnut cream and tahini and bake in the oven for about 30 minutes at 220 degrees or until the top is browned. Golden.
