- Dulce de leche can (I cooked the condensed milk can)1 unit(s)
- Wheat Flour2 cup
- Sugar2/3 cup
- Egg1 unit(s)
- Egg yolk1 unit(s)
- Ripe dwarf banana4 unit(s)
- Pinch of salt1 unit(s)
- Whipped cream1 cup
- Whipped cream1/4 cup
- Sugar (for topping)2 tablespoon
- Cinnamon powder to sprinkle on top to taste
- After cooking the condensed milk to form dulce de leche, set aside and make the dough:
- In a large bowl put the flour and sugar and mix, add the cold butter and mix with your hands until you form a farofa and open a hole in the middle
- In a small bowl break the egg and separate the yolk, reserve the yolk in another pot. Add the whole egg to this yolk and beat well until foamy with a fork or fouet.
- Place this beaten egg with the yolk in the center of the hole and knead with your hands until you form a smooth dough, shape the dough and flatten it as if it were a disk of dough. Wrap in cling film and place in the fridge for about 40 minutes.
- Flour a clean countertop and open the dough with a rolling pin, sprinkle flour while opening the dough
- Carefully place the dough in a mold with a removable bottom and hit the sides of the mold with your hands to fix it.
- Return the dough to the fridge for an hour or leave it overnight.
- Remove the dough form from the fridge and place aluminum foil covering the center and sides of the dough (bend the ends of the aluminum foil out of the form) fill the bottom with raw bean grains (to prevent the dough from cracking when baking)
- Bake in a preheated oven at 180 degrees for about 30 minutes, remove from the oven and wait for it to cool, carefully remove the foil with the beans
- Return the pie to the oven for another 5 minutes until golden a little (only that time) remove from the oven and wait to cool completely
- Unmold the pie and place it on a tray or platter and start assembling
- Mix the dulce de leche with a pinch of salt and spread evenly on the bottom of the pie.
- In the mixer, place the cold fresh cream and add the sugar, beat on low speed, when it starts to get firm, increase to medium speed and beat until firm in whipped cream
- Peel the bananas and cut lengthwise. Place on top of the layer of dulce de leche
- Cover with the whipped cream and take it to the fridge for at least 2 hours, sprinkle cinnamon powder and serve next 😋
