- In a water bath, melt the chocolate. Remove from the water bath, add the milk cream, stir well until incorporated (it became a ganache). Reserve.
- Separate the yolks from the whites of the two eggs.
- In a bain-marie, mix the egg yolks with the 2 tablespoons of sugar, stirring constantly until it turns into a whitish cream and doubles in volume. After that, book.
- Also in a water bath, add 1/3 cup of sugar to the 2 egg whites. Be careful not to cook the whites. It's quick, just to incorporate the sugar.
- Incorporate the chocolate ganache into the egg yolk cream with sugar, set aside.
- Whip the egg whites with the powdered sugar. Add this egg white to the other mixture little by little, very lightly, making an upward movement with the spatula, so that the air in the egg whites does not dissipate.
- Put it in a bowl and take it to the fridge for 2 hours. It's ready to consume.
