- Baked Butter Beans without salt and seasoning1 cup
- Demerara sugar1 cup
- Oat flakes1/3 cup
- Cocoa Powder1/4 cup
- Salt1/4 cup
- Almond or Peanut Paste1/3 cup
- Vanilla Essence1/2 teaspoon
- Baking soda1/2 teaspoon
- 70% or semisweet chocolate chips1/2 cup
- Sugar-free dulce de leche to serve1 tablespoon
- After cooking the butter beans without salt and without seasoning, drain and set aside (cook in a common pan for 50 minutes)
- In a food processor beat the sugar with the oats until it forms a fine flour.
- Add the cooked butter beans, salt, cocoa powder and beat again until smooth and creamy.
- Add the almond paste, vanilla essence and baking soda and beat quickly until smooth.
- Remove from the processor and add the chocolate chips
- Place in a greased rectangular shape with a little butter and cocoa or with greased parchment paper.
- Bake in a preheated oven at 180 degrees for about 30 minutes or until it's soft on the inside and forms a crust on the outside.
- Expect to cool down completely and unmold
- Cut into squares and serve with dulce de leche (optional)
