Carob cake with loquats

- Egg white1 unit(s)
- Chocolate flavored oatmeal20 g
- Carob Flour8 g
- Milk of choice3 tablespoon
- Large chunks of loquat2 unit(s)
- Baking powder1 coffee spoon
- Liquid (or other) sweetener to taste
- Quark to taste
- Beat the whites with the milk and the sweetener. I sieved the flour and yeast, mixed well.
- I greased a mug with coconut oil and carob flour. I poured the dough and took it to the microwave for 2min until it was cooked (not overcooked).
- I let it cool down a bit, unmold it. I put it on a plate and soaked it with milk.
- I covered the top with quark and added pieces of loquat. I put it in the fridge overnight to keep it fresh and moist.
- Cover with protein cream (1 scoop of chocolate pea protein + 1 tsp of pure cocoa powder + water until set). (Optional)
