- Coarsely sliced carrot180 g
- Egg2 unit(s)
- Coconut oil1/2 cup
- Demerara sugar3/4 cup
- Wheat Flour1 cup
- Chemical Yeast1 teaspoon
- Chocolate Chips1/2 cup
- In a blender beat the carrot, sugar, oil and eggs until you get a homogeneous cream.
- Pour the blender mixture into a container, add the wheat and mix well. Add 2/3 of the chocolate chips as well and mix.
- Add the yeast and stir gently to incorporate the dough.
- Put the dough in greased cupcake molds and put some chocolate drops on top.
- Place in a preheated oven at 180°C to bake for about 20 minutes (do the toothpick test).
