- Whole milk1 l
- Egg Yolk7 unit(s)
- Sugar250 g
- Corn Starch2 tablespoon
- Cinnamon stick1 unit(s)
- Lemon zest1/2 unit(s)
- Sugar to caramelize to taste
- Bring 3/4 of a liter of milk to boil with the sugar, cinnamon and lemon zest. Dissolve the cornstarch in the rest of the milk and mix with the yolks. When the first mixture starts to boil, remove from the heat and gradually incorporate the yolk mixture, stirring carefully to avoid curdling, until it forms a cream. Divide into portions in ramekins and place in the fridge.
- When serving, remove from the fridge, sprinkle sugar on top and caramelize with the help of a blowtorch.
