Chocolate and salted caramel pie

- Cornmeal Biscuit150 g
- Butter80 g
- Cocoa powder10 g
- Dark chocolate300 g
- Sour cream150 g
- Crystal sugar200 g
- Fresh cream130 g
- Butter50 g
- Fleur de sel to taste
- BASE Beat the cookie in the processor until you obtain a fine flour. Add the melted butter and cocoa and beat until a homogeneous mixture is obtained. Take this base to a pie pan (I used 18cm) pressing well on the base and sides. Bake in a heated oven at 180°C for 15 minutes. After that time, take it out of the oven, let it cool and unmold.
- GANACHE Melt the chopped chocolate in the microwave, stirring every 30 seconds. When it is completely melted, add the cream (at room temperature). Stir until obtaining a homogeneous mixture.
- CARAMEL Place the sugar in a pan and place over medium heat. Let all the sugar melt until you get a golden caramel. Lower the heat and add 50g of butter. Then, very carefully add the fresh cream. Stir well, finish with the fleur de sel. Transfer the creamy caramel to a bowl and let it cool.
- MOUNTING At the base of the cooled pie, add the chocolate ganache and refrigerate for 20 minutes or until the ganache is firm. Then add the caramel and finish with fleur de sel if you like! If you don't have or don't like the idea, you don't have to!
