- Semisweet Chocolate200 g
- Unsalted butter100 g
- Eggs4 unit(s)
- Sugar4 tablespoon
- Coffee1/3 cup
- Separate the whites from the yolks
- In a small pan, place the chocolate, butter and coffee. Take to the low fire, always stirring until the mixture is homogeneous. Turn off the heat and set aside.
- In the larger bowl of the mixer, add the sugar and the egg yolks and beat until you get a whitish cream. Add the melted chocolate and beat well.
- Wash and dry the mixer blades well. In the smaller bowl, place the egg whites and beat until stiff. Add ⅓ of the egg whites to the chocolate mixture and mix well. Incorporate the rest of the egg whites gently, from bottom to top without beating too much.
- Transfer the mousse to individual cups or bowls or a large bowl and refrigerate for at least 6 hours. Serve chilled. Add chocolate shavings to decorate
