- How to Prepare the Pasta: Put the wheat flour, cocoa powder, sugar, butter and the egg yolk inside a food processor and mix well until it becomes a dough. If you don't have a food processor, place all the ingredients in a bowl and mix well with your hands until it forms a dough. Cover the dough with plastic wrap and take the dough to the fridge for 20 minutes.Remove the dough from the fridge and place it on a table greased with wheat flour. dough inside a shape with removable bottom and light to bake in a preheated oven at 180 degrees for 15 to 20 minutes. As soon as the base of the pie bakes, remove it from the oven and let it cool.
- How to Prepare the Pie Filling: In a glass container add the cream and chocolate (Heat it in a water bath until the mixture is very homogeneous). Now in a pan add the whites and sugar, always stir well on low heat without stopping for 3 minutes, take the pan off the heat for a few moments every few minutes. Then pour the mixture into a mixer and beat well until it doubles volume. Now pour the whites that were beaten together with the chocolate ganache and finish with the wine, stir gently until the ingredients are incorporated.
- Pie Assembly: Gently add the wine mousse filling into the pie crust and refrigerate for approximately 5 hours. Tip from chef Vaneza Antunes: You can give it a very special touch by adding a little cocoa powder on top of the pie or whipped cream, it will be a real delight.
