- Oat flakes1.1/2 cup
- Sliced Almonds1/3 cup
- Pitted Dates2/3 cup
- White raisin1/3 cup
- Peanut Butter1/4 cup
- Honey1/4 cup
- Lemon (zest and juice)1 unit(s)
- Coconut oil1 tablespoon
- Salt to taste
- Vanilla Extract to taste
- Flaxseed1/4 cup
- Sunflower seed1/4 cup
- Preheat the oven to 180º and, in a baking dish, place the oat flakes and almonds, taking to toast (about 5-7min)
- Meanwhile, process the dates, raisins, lemon zest and juice in a food processor. Reserve.
- In a small saucepan, place the honey, peanut butter and coconut oil. and heat over low heat just to just melt and incorporate better. Add the pinch of salt and vanilla extract.
- In a bowl mix everything, adding the flaxseed and sunflower seed, until it becomes a single mass.
- In a pan lined with parchment paper, pour the dough and, with the back of a spoon, level it all over the bottom. Cover with more parchment paper and refrigerate overnight.
- Once firm, unmold and cut into the shape you prefer, using a large knife.
- You can consume it right away or store it in the fridge for up to 3 months.
