- Vanilla essence1 coffee spoon
- Hydrated colorless gelatin1 unit(s)

- Pitted Black Plum100 g
- Cinnamon husk1 unit(s)
- For the syrup, bring the plums, cinnamon, enough water to cover the plums and half a cup of the sweetener of your choice to a low simmer. Let it cook until the plums are soft.
- In a blender, combine coconut milk, heavy cream, half a cup of sweetener, vanilla essence, grated coconut (reserve a little for garnish), and hydrated gelatin according to package directions.
- Take it in a greased shape with coconut oil and let it freeze until it's firm.
- Unmold and cover with plum syrup.
