- Coconut Milk500 ml
- Culinary sweetener100 g
- Lemon juice100 ml
- Lemon zest to taste
- Heat the coconut milk
- Add the culinary sweetener and stir well until it comes to a boil.
- Turn off the heat and wait for the mixture to become lukewarm.
- Add the lemon juice and beat until obtaining a homogeneous cream.
- Cover with a plastic film in contact with the mixture, and take it to freeze.
- Once frozen, beat again to break the ice crystals and make the ice cream fluffy.
- Repeat the process 3 times. Last time add the lemon zest and let it freeze for 8 hours before serving.
