  • Egg white foam5 unit(s)
  • Egg yolk5 unit(s)
  • Milk130 g
  • butter80 g
  • Flour100 g
  • Instant coffee15 g
  • Baking powder5 g
  • Salt2 g
  1. Beat the yolks in the mixer until it becomes clear.
  2. Melt the butter in a bain-marie together with the milk and ground coffee.
  3. With a whisk, add the milk and egg yolks, adding the flour, salt and yeast.
  4. Beat the egg whites, adding the sugar in three parts, until firm.
  5. Combine the egg whites with the yolk mixture.
  6. Pour the dough into a hole mold (with a removable bottom) WITHOUT greasing it, as after baking it should be upside down until it cools down.
  7. Preheat the oven to 180 degrees and bake for 35 minutes.
