- Fresh yeast30 g
- Butter120 g
- refined sugar200 g
- Egg Yolks6 unit(s)
- refined salt1 teaspoon
- Whole milk120 ml
- Orange Peel1 unit(s)
- Vanilla (essence, extract or bean)1 teaspoon
- Chocolate Chips100 g
- Banana2 unit(s)
- Nuts80 g
- Start by boiling the orange in a pan with plenty of water to remove the acids, boil until the peel is at the correct point for sweetness. Then hit the blender with the vanilla extract and 80g of sugar. Leave the folder reserved.
- To start we will make the sponge, In a bowl or in the mixer itself add two spoons of flour, 4 spoons of water, yeast and a spoon of sugar. Stir well and let rest until doubled in size (15-20 minutes) depending on room temperature.
- In the mixer place the sponge, the remaining flour, the egg yolks, the milk, butter, sugar and the orange paste, beat on low speed until everything is incorporated. Let it rest for 10 minutes
- Put a spoonful of water in the salt to dissolve and add to the dough, beat a little more until the dough is elastic. If necessary, correct with water. Involve the chocolate, banana and nuts. Transfer to a disposable or baking dish and let it rest until it doubles in volume.
- Take it to bake in the preheated oven 20 minutes before baking at 180° and bake for 40 minutes until golden. Let it rest and serve
