- Melt the butter, then add the sugars with the butter in a mixer and beat until you create a homogeneous and slightly whitish mass.
- Then, whisking constantly, add the egg, yolk and vanilla essence.
- From now on the rest of the ingredients are mixed by hand so as not to create so much gluten in the flour. Add the flour in pieces and gradually involve, you can add the salt at this time.
- The bicarbonate will enter when the last part of flour is added. When everything is well involved, add the chocolate and mix.
- Then we make a ball of up to 80g and reserve. Go to the freezer, because we don't want them to break up and form a single cookie 😅
- Pre heat the oven to 180°. Once frozen, place in a greased or non-adherent shape and bake for about 20/25 minutes. Then let the cookies cool down for about 15/20 minutes.
