- Cornmeal2 cup
- Wheat Flour2 cup
- refined sugar11/2 cup
- Baking Powder1 tablespoon
- Milk60 ml
- Fennel1 to taste
- Beaten egg yolks for brushing2 unit(s)
- In a bowl, mix all the dry ingredients (cornmeal, wheat flour, refined sugar, baking powder and fennel). Add the eggs and margarine and knead until you get a thick farofa. Add the milk gradually until you get a homogeneous mass. Take a tablespoonful of the dough and shape it into a ball. Put it in a sprinkled shape with cornmeal only. Repeat until you run out of dough. Leave a space between each ball of dough, as they will splatter. Bake in a preheated oven at 180ºC for about 40 minutes or until the bread is golden. Remove from the oven, wait to cool down and serve. Tips Do not let the bread brown too much, as it can become hardened. Do not change the mimoso cornmeal for another type of corn flour, as it will not work. If you want, add a small piece of guava paste or cheese over each ball of dough, before taking it to the oven. It's delicious!
