Cream ice cream with saffron and pistachios

  • shelled pistachios50 g
  • Saffron pistil1 unit(s)
  • Syrup: rose water2 tablespoon
  • Syrup: Clove5 unit(s)
  • Syrup: cinnamon stick1 unit(s)
  • Syrup: star anise2 unit(s)
  • Syrup: sugar2 cup
  • Syrup: water2 cup
  1. In a pan, combine water with sugar and spices. Leave it on medium heat for approximately 30 minutes or until the syrup is in a wire point. Let it cool and add the rose water.
  2. Crush the pistachios, without letting them crumble.
  3. Combine the ice cream with the saffron, syrup and rose water in a food processor. Then add the pistachios.
  4. DeliRec in partnership with chef Katia Hannequim.
