- Fresh cream350 ml

- Sugar1/2 cup
- Extract, essence or vanilla bean1.1/2 dessert spoon
- Milk100 ml
- Sugar to taste
- Heat the fresh cream, as soon as it boils, turn off the heat.
- In a bowl, sift all the yolks, and mix with the sugar.
- Gradually add the heated cream to the egg and sugar mixture, and mix gently.
- Add the vanilla and milk. Shake well.
- Place the mixture in ramekins or small ceramic or oven dishes. Place the ramekins on a baking sheet and carefully pour hot water to bake in a bain-marie.
- Take it to the preheated oven, at 160 degrees and let it bake until they are firm on the edges and more wet in the middle.
- Refrigerate for at least 4 hours.
- When serving, sprinkle sugar over the entire dessert, and carefully burn it with a blowtorch or a heated spoon on the stovetop.
