Dulce de Leche Mousse with Coconut Milk

- Condensed milk1 unit(s)
- Coconut milk200 ml
- Unflavored gelatin1/2 unit(s)
- Egg whites2 unit(s)
- Fleur de sel to taste
- Water50 ml
- Place a can of condensed milk in a pressure cooker with water until it covers the can (I'm sure you removed the label and any glue residue so you don't clog the pot valve). Cook for 35 minutes over medium heat after boiling. Let cool
- Mix the dulce de leche and coconut milk and beat well with a mixer or blender until you have a light and aerated cream.
- Dilute the gelatin in a glass of cold water, microwave for 15 seconds, remove and stir until completely dissolved.
- Beat the egg whites and mix all the ingredients (except the fleur de sel), folding with a spatula, being careful not to lose the air in the mixture.
- Refrigerate in individual portions or in a larger container until completely chilled for at least 2 hours.
- Serve with a pinch of fleur de sel individually when tasting.
