- Packet of Maizena biscuits (30g each)5 unit(s)
- Butter or margarine3 tablespoon
- Eggs3 unit(s)
- Creamy cheese600 g
- refined sugar1 cup
- Lemon zest to taste
- Frozen Berries300 g
- refined sugar1 cup
- Lemon Juice1 unit(s)
- Start by preparing the cheesecake base by crushing the Maizena cookies in a food processor or blender.
- Melt the 3 tablespoons of butter in the microwave every 15 seconds
- Mix the melted butter with the crushed biscuits, forming a crumbly mixture.
- Take a baking dish with a removable bottom and place this farofa base, hitting it with your hands until it is uniform and very straight in shape.
- Cover with cling film and place in the freezer
- Make the filling: Place the eggs, the cream cheese, the lemon juice, the sugar in the mixer and beat well for about 5 minutes (use the whisk)
- Place this filling on top of the farofa base that you left in the freezer.
- Place this mold in a bain-marie and cover with aluminum foil.
- Bake in preheated oven at 180 degrees for about 50 minutes
- Wait for it to cool completely and unmold carefully, take it to the fridge while you make the red fruit syrup
- In a pan put the frozen fruits, the sugar and the juice of 1 lemon
- Cook over low heat until it forms a jelly type 😉
- Allow to cool completely and place on top of your cheesecake.
- Place in the fridge overnight, preferably.
- Serve at Christmas dinner 🎄🎅
- Tip: Cut into squares or like slices of pie 😉 use your creativity 🎄
- If you are going to cut it into squares, a tip is to leave the cheesecake very cold and cut it before pouring the syrup, so you pour the syrup individually over each square 😉
