- Guava cubes (optional) to taste
- Start by chopping the guava and set aside. Preheat the oven to 180°C and grease an 18 cm diameter pan with butter and refined sugar (you can grease it with the cornmeal too) I like the sugar because it leaves a delicious, shiny and crunchy crust.
- In the blender, start beating the eggs, sugar, milk and oil well. Add the cornmeal and beat just until incorporated.
- In a bowl, sift the flour and add the mixture from the blender, incorporating it well until it becomes a smooth and homogeneous mass, add the yeast and mix delicately. The dough is very creamy, and this denser, "thick" texture is what will sustain the guava pieces without them sinking.
- Transfer the dough to greased shape and place the guava pieces on the dough. Bake for 25 to 30 minutes. As soon as you start to perfume the house, it will be ready, do the toothpick test.
- Tips: if you want to guarantee by passing the pieces of guava in the flour. I don't do this process and it always works, but it's a tip that also works. This cake is fluffy and moist, just be careful not to "bake it too much" because it can dry out since depending on the cornmeal it tends to be drier. You can also serve it with a guava syrup that is delicious!
