French toast in Madeira wine

- Sugar300 g
- Water200 ml
- Butter1 dessert spoon
- Cinnamon stick1 unit(s)
- Peel of 1 Sicilian lemon (only the yellow part)1 unit(s)
- Salt to taste
- Eggs2 unit(s)
- Egg Yolks2 unit(s)
- Madeira wine500 ml
- Honey75 g
- Sunflower oil for frying to taste
- Cut the bread into slices of about 2 cm.
- Bring the sugar, water, cinnamon stick, lemon zest and a pinch of salt to a boil.
- Remove from heat and dip the slices of bread into the hot syrup. Drain over a sieve.
- Heat a layer of about a finger of oil in a frying pan.
- Mix the eggs with the yolks and pass the breads in this mixture. Fry them in hot oil, turning them on their sides when one side is golden brown.
- Drain the buns on paper towels.
- In a deep dish spread the buns and sprinkle lightly with sugar and cinnamon. If you can't fit everything in one layer, it's okay to stack the loaves in several layers.
- Separately, heat the Madeira wine with the honey. When boiling, pour the mixture over the buns. Leave at room temperature overnight so that the buns absorb the wine well. Only then should the french toast be served.
- Note: despite being boiled, this recipe retains part of the alcohol in the wine, so it is not recommended for children. You can use dry or sweet wood, according to your preference. I usually use dry as the recipe still calls for enough sugar.
