- Butter for greasing pan to taste
- Wheat flour for greasing pan to taste
- Preheat the oven to 150°C (low temperature). Grease a large rectangular baking dish with butter and sprinkle with flour. Tap the sink to remove excess flour.
- In the bowl of the mixer, place the whites and light to beat until the point of snow: start on low speed, when foaming increase the speed to medium and let it beat until it's firm. Keep the mixer on medium speed and gradually add the sugar. Whisk for a few more minutes until a stiff, glossy meringue forms.
- To shape the pavlovas: with a tablespoon, spread the meringue on the baking sheet, forming 6 high mounds. With the tip of the spoon, make a cavity in the center of each mound - as if it were a "bowl" to fill after baking.
- Place in preheated oven and bake for about 30 minutes. Turn off the heat and keep the roast in the oven off until the pavlovas dry completely, for about 4 hours without opening the door - this way they finish roasting without browning. If you prefer, prepare the meringue and bake the pavlovas the night before.
- To serve, whip a whipped cream and add the fruits of your choice.
