- Demerara sugar1/2 cup
- Toasted shredded coconut1/2 cup
- Coconut oil1/3 cup
- In a pan over medium heat, cook the grated carrot together with the coconut milk until the milk evaporates.
- Add the sugar, toasted coconut and coconut oil and cook for 3 minutes.
- Let it cool in the fridge and form 20 g balls.
