Greek Yogurt Mousse with Berries

- Greek yogurt with no added sugar500 g
- Unflavored gelatin in foil3 unit(s)
- Fresh cream300 ml
- Berries (raspberry, blackberry, strawberry, blueberry)500 g
- Refined sugar to taste
- Soak the gelatine sheets in cold water to soften and set aside.
- Heat two (2) tablespoons of Greek yogurt in a small saucepan and then remove from heat.
- Remove the gelatine from the cold water and add it to the lukewarm yogurt.
- Stir the mixture until the gelatin is completely dissolved and set aside.
- In a glass bowl, beat the cream until soft peaks form. At this stage, you can add a little caster sugar (if you prefer sweeter desserts) to beat along with the cream.
- After the soft peaks form, carefully add the Greek yogurt (part without gelatin) to the cream.
- Whisk the mixture until it thickens again.
- Add the yogurt with gelatin to the mixture.
- Mix carefully so as not to lose any air bubbles in the cream. Reserve
- FOR THE RED FRUIT PUREE:
- Blend 150g of red berries.
- Place the beaten fruit in a pan and heat over low heat until it thickens.
- After thickening, place the rest of the fruit in the puree and stir gently until it forms a puree with pieces of fruit. At this stage, you can also add sugar if you prefer sweeter desserts.
- Remove from heat and set aside until cool.
- MOUNTING:
- Arrange the yogurt in a large transparent dish or in individual bowls.
- Finish with the red fruit puree on top.
