- Raw Cashew Nuts1 cup
- Golden Flaxseed1 tablespoon
- White raisin2 tablespoon
- Pistachio for garnish to taste
- Mint leaves to taste
- Lemon juice1 tablespoon
- Ripe Mango1 unit(s)
- Soak the chestnuts in water for 2 hours.
- Soak the flaxseeds in 4 tablespoons of water for 2 hours.
- Soak the raisins in 4 tablespoons of water
- Discard the water from the chestnuts and blend in a blender with 1/2 cup of water until obtaining a smooth cream. Add the raisins with the hydration water and beat well. If necessary, add more water little by little to obtain the desired consistency.
- In a blender, blend the mango with the hydrated flaxseed and lemon juice until very creamy.
- Place a layer of mango cream in the pot and then one of the chestnut cream.
- refrigerate
- When serving, garnish with pistachios and mint leaves.
