- It is important to choose the chubby green papaya as possible. After all, after opening the papaya and removing the seeds, the papaya is washed and the thin slices are cut using a mandolin. The chubbier, the wider the ribbons making it easier to shape the rosettes
- Place the cut ribbons in a container with water and baking soda. Leave to soak for 30 minutes. Remove from sauce, quickly rinse under running water. To shape the roses you make small rolls with slices of papaya. When you finish shaping the rose, pass a large sewing needle in the center of each one. I always put a maximum of 8 of them together, to facilitate handling.
- In a pan, place the sugar, water and spices over very low heat. When the sugar has completely melted, place the strips of roses and arrange them so that they are covered in the syrup. Keep an eye! Between 30 and 40 minutes the candy is ready. You will know when the papaya becomes transparent. Then just remove the strips from the syrup and let it cool to remove the line.
- The bicarbonate, in addition to helping to get the “milk” out of the papaya, helps in the final consistency of the candy. Spiced syrup tends to be darker. If you want a clear syrup, you need to consider this. These little roses are small gems, which can be placed in candy molds. Or still, placed in sterilized jars and covered with syrup.
