- Rice flour1 cup
- Carrots, peeled and chopped3 unit(s)
- Egg3 unit(s)
- Erythritol Sweetener1 cup
- Sunflower oil1/2 cup
- Baking powder1 tablespoon
- Dark chocolate100 g
- In the blender, beat the eggs, carrots, sweetener and oil;
- In a bowl, place the above mixture and with a whisk, mix the rice flour, oats and yeast, until a homogeneous mass is formed;
- Distribute the dough in silicone molds and bake at 180 degrees for 20 minutes;
- Melt the chocolate in the microwave (30 in 30 seconds) and put it over the cookies as a topping, it's ready to serve!
