- Dough: almond flour (one and a half cup)180 g
- Dough: rice flour1 cup
- Dough: flaxseed flour1 tablespoon
- Dough: potato starch2 tablespoon
- Dough: crushed sea salt (1/4 tsp) to taste
- Dough: butter150 g
- Dough: demerara sugar (1/3 cup)40 g
- Dough: vanilla extract (1/2 tsp) to taste
- Dough: egg1 unit(s)
- Dough: lemon1 unit(s)
- Topping: vegetable drink200 ml
- Topping: demerara sugar200 g
- Coverage: colored granules to taste
- In a large bowl, mix all the flour, starch and salt. Separately, in a mixer, beat the butter with the sugar for about 2 minutes. Then add the vanilla extract, egg and lemon zest and continue beating to incorporate.
- Place the mixture in the bowl with the dry ingredients and start mixing until everything is incorporated. Cover with plastic wrap and refrigerate until firm enough to roll open.
- Line a surface with parchment paper or a silicone mat and sprinkle potato starch on top.
- Place the dough on the silicone mat or butter paper and, with the help of a rolling pin, open the dough. Make the cuts in the desired shapes.
- Repeat the whole process until the dough runs out. Always remembering to refrigerate. Finally, bake the cookies in a preheated oven at 170 degrees until the edges are browned.
- For the topping, mix the vegetable drink with the sugar. Apply over the cookies and pass on the sprinkles.
