- Fresh cream400 g
- Refined sugar70 g
- Lavender flower1 tablespoon
- Unflavored Gelatin Leaves (or 6 g gelatin powder)4 unit(s)
- Honey to taste
- Heat the cream and sugar in a medium saucepan and cook for about 5 minutes or until boiling (keep the heat on medium-low).
- Turn off the heat, add the lavender and wait 10 minutes to infuse. Save some for decoration.
- While the cream is simmering, hydrate the gelatin powder as described on the package. When the gelatin hydration process is over, add them with the cream and turn off the oven. Stir well until all the gelatin is dissolved. Strain the cream.
- Fill the molds, cover with plastic wrap and leave in the fridge for at least 2 hours. When serving, add strands of honey to make a syrup, but don't overdo it. Garnish with the lavender flower.
