- Pure Lemon Juice (small lemon)1 unit(s)
- Lemon zest (for garnish)2 tablespoon
- Beat the eggs in the blender, or by hand, beat well, then add the sugar and margarine, beat well again. Add the lemon zest, lemon juice and milk, beat well again. Then add the wheat flour little by little and mix, this process is done by hand, as it can weigh your blender and burn it, then transfer all the liquid to a platter and gradually mix the flour, until it is completely finished and becomes a homogeneous mass, then add the coloring if you prefer, and the baking powder, mix again.
- Then put the dough in a roast of your choice, and take it to bake in a preheated oven at 180°C, for about 40 minutes or until it's baked. Do the toothpick test.
- For the frosting, mix the condensed milk and lemon juice and throw it over the cake, it doesn't need to go to the fire, it's in the texture of a very creamy frosting. On top of this topping, sprinkle the lemon zest.
- Important informations
- Do not open the oven in the first 30 minutes of the oven, this will mess up your recipe. Do not put seeds in the lemon juice, this will make your cake bitter. You can increase your lemon cake, making a mix of lemons, mix equal parts of Tahiti lemon and Sicilian lemon, the Sicilian lemon is very aromatic and sweet, which only has to add to your cake. If you want a simpler cake, you don't need icing, it's perfect too. Although this recipe is in the blender, when the flour is added, transfer the liquids to a platter and beat the rest of the process by hand, this way you prevent your blender from spoiling.
