- Sugar50 g

- Wheat flour125 g
- Baking powder4 g
- Milk50 ml
- Olive oil40 ml
- Vanilla essence3 ml
- Lemon zest3 g
- Salt2 g
- Lemon juice25 ml
- Icing sugar50 g
- Pre-heat the oven at 180 °
- Beat the butter and sugar until you get a creamy mixture.
- Add the eggs one by one
- Add the milk, vanilla and lemon zest.
- Separately, sift the flour with the baking powder and salt.
- Add the dry ingredients to the mixture and eggs and mix well.
- Pour the dough into a greased and floured pan.
- Bake over medium heat until a toothpick is inserted and it comes out clean.
- For frosting: make a light frosting by adding the icing sugar to the lemon juice. Spread over the cake and wait for it to cool to set the frosting.
