- pudding syrup 1. You will need a round pan, with a hole in the middle, 22 cm in diameter. Take a kettle with 3 cups (tea) of water over medium heat â it will be used to make the syrup and bake the pudding in a bain-marie. 2. In a medium saucepan, place the sugar over low heat. Stir with a spatula until the sugar melts completely and forms a golden caramel. 3. Measure out â cup (tea) of boiling water and carefully drizzle over the caramel. Caution: the syrup will bubble. Then mix with the spatula, until it forms a smooth syrup. 4. Transfer the syrup to the mold, pouring it over the central cone. With a dish towel or thermal glove, hold and turn the mold to caramelize the side as well. Set aside and prepare the pudding mixture.
- the pudding 1. Preheat the oven to 200ÂșC (medium temperature). 2. In a small bowl, break one egg at a time and transfer to a blender. Beat the eggs by themselves, just to mix. Place the baking dish with the mold in the oven, and only then water it with boiling water, until it covers half of the pudding mold. Bake for about 1 hour â time may vary depending on the model and type of oven. The pudding is ready when the surface is firm, but the inside is still creamy â it finishes firming as it cools. 4. Remove the pudding from the oven and let it cool down before putting it in the fridge. Let it freeze for at least 3 hours before unmolding (if you prefer, prepare the pudding the day before). 5. To unmold, pass the base of the mold over the flame of the lit stove, just to release the syrup. Cover the mold with a plate with a high edge and turn it over in one go.
