- egg whites4 unit(s)
- Demerara sugar250 g
- Corn starch2 teaspoon
- Vanilla Extract1 teaspoon
- Lemon zest1 unit(s)
- Greek or Creamy Yogurt1 cup
- Berries (whichever you prefer)1 cup
- Preheat the oven to 180°C.
- Beat the egg whites and salt in an electric mixer on medium speed until peaks form, about 2 minutes.
- Increase the speed to medium-high and beat for another 2 to 3 minutes, until it thickens without forming dry peaks. Gradually add the sugar, beating constantly. Increase the speed to high and beat for another 3 to 5 minutes.
- Slowly pour the cornstarch and vanilla extract over the meringue, mix, and using a pastry bag, make the round shape of the mini pavlovas, as shown in the video.
- Place in a low oven for 1 hour. Turn off the oven and leave it in there for another hour to dry well.
- Just before serving, place the yogurt filling and on top, decorate with the red fruits (you can also add jam).
