- Preparation: beat the egg whites until stiff and add the 6 tablespoons of sugar.
- Beat again and add the hot caramel mix everything very well.
- Pour the mixture into a greased shape and put it in the oven.
- Once golden, remove from the oven and let the pudding cool.
- Pour the pudding on a plate and serve with soft egg cream.
- Caramel: in a small saucepan, bring the 6 tablespoons of sugar to the heat, stirring constantly. Remove from the heat as soon as you have the caramel and do not let it cool down.
- Soft eggs: 1 tea cup of sugar 1/2 cup of water 3 eggs.
- Bring the sugar and water to the boil, until it becomes pearl point (the sugar melted). Remove from heat and set aside. In a bowl, beat the yolks very well and add a tablespoon of water with the sugar, stir immediately. Repeat the process a few times. Add the yolks and the rest add water with sugar and bring to the boil again. Stir constantly until it thickens
