- Fresh cream250 ml
- Milk50 ml
- Colorless gelatin in sheets2 unit(s)
- 1 vanilla bean or vanilla essence1/2 teaspoon
- Sugar60 g
- Water for the syrup400 ml
- Strawberries or berries15 unit(s)
- Soak the gelatin in two tablespoons of water and set aside. Cut the vanilla bean in half lengthwise with the help of a small knife. Remove the seeds from inside the bean by scraping with the blunt side of the blade. Reserve the seeds and beans. In a small saucepan, whisk together the cream, milk, sugar, vanilla seeds and fava beans. Place over medium/low heat and cook until the sugar dissolves and without letting it boil. Remove from heat, let cool a little, drain the gelatine water well and add to the cream. Completely dilute the gelatin, stirring well to incorporate. With a ladle, fill 100ml aluminum molds, if you want them to unmold, and put in the fridge for 6 hours or overnight. When serving, make a syrup with some strawberries and use the others to decorate.
