- Refined sugar50 g
- Gelatin5 g
- Water30 g
- Strawberry, diced250 g
- Sugar125 g

- Cognac25 g
- Hydrate the gelatin with 30 g of water for 10.
- Bring the cream and milk to the fire and the vanilla already opened with the seeds. Boil and turn off. Add the vanilla and mix well. Strain and add as desired. Put in the fridge for 4 hours
- Strawberry Collision: wash and cut strawberry into pieces and bring to a low heat with sugar and cinnamon. Cook for 25 minutes and turn off. Add cognac (optional)
- Place the coulis over the panna cotta
