- Sicilian lemon zest1/2 tablespoon
- 4 1/2 sheets of colorless gelatin or (9 g of colorless gelatin powder)10 g
- frozen raspberries600 g
- water1 cup
- refined sugar400 g
- Sicilian lemon2 tablespoon
- Pre heat the oven to 180C Put the flour in a bowl, the cold butter in cubes, the sugar and a pinch of salt. Mix with your fingertips until it forms a crumb. Add the whole egg plus the yolk and mix until it forms a uniform mass, wrap and freeze for 1/2 hour. Open the dough, line the shape and put beans on top (to serve as a weight) and bake for 15 minutes. Once the dough has cooled, remove the beans (they can no longer be eaten) and return the form to the oven for 12 minutes to finish baking the dough completely. Remove and let cool.
- Bring to the boil 250 ml of fresh cream, 135 grams of sugar, the vanilla extract, the strained orange juice, and the lemon zest. When it boils, turn off and let it cool Hydrate the gelatin according to the instructions and mix it with the cream while still warm.
- Whip the remaining 400 ml of ice cream and add the cream with the gelatin
- Pour over the cold pie and refrigerate for 4 hours.
