- Peel and cut the mango pulp into medium pieces. Transfer to a medium saucepan, cover with water and cook over low heat for about 15 minutes, stirring occasionally and mashing with a spatula to form a puree.
- Cut off the tops of the passion fruit and add the pulp (with the seeds) to the mango puree. Add the sugar and mix well. Cook over low heat for another 25 minutes, until thickened, stirring occasionally to prevent sticking to the bottom and sides of the pan. To check the doneness, place a little of the jelly in one of the corners of the saucer and gently tilt it: the jelly must be in the consistency of a gel, it cannot run liquid.
- With a ladle, transfer the jelly still hot to sterilized glass jars, leaving about 2 cm until the lid is free. Close the pots with the hot jelly to form a vacuum.
