- Passion Fruit Juice Concentrate1 cup
- 1 can of condensed milk395 g
- 1 box of sour cream200 g
- 1 packet of unflavored gelatin25 g
- Passion Fruit Pulp1/2 cup
- Sugar1/2 cup
- Prepare the gelatin according to the package instructions, set aside. For passion fruit juice, you can use bottled ones that you sell in the market. Or blend in a blender, lightly pulsing the pulp of 2 to 3 passion fruit with the minimum amount of water necessary and pass through a sieve.
- Beat the condensed milk for 1 minute in the blender, add the juice and the cream and beat for another 2 minutes. Finally, add the gelatin and let it beat just until it's well incorporated.
- Take a mold of your choice and lightly grease it with oil. Pour the mousse mixture is light to freeze for approximately 3 hours.
- While the mousse sets in the fridge, prepare the syrup. In a pan, combine 1/2 cup of passion fruit pulp (with the same seeds) with 1/2 cup of water and bring to a boil. As soon as it boils, lower the heat and with the help of a spoon remove the foam that forms, thus avoiding bittering. Let it boil until it gets thicker but don't let it thicken too much because after it cools it will firm up more. Let the syrup cool and when the mousse is firm, unmold and pour the syrup.
- Note If you don't want to unmold the mousse, just remove the gelatin from the recipe. It will be very creamy and you can serve it in small bowls with the syrup too.
