- sugar150 g
- Cinnamon Raw1 unit(s)
- vanilla bean (cut in half to remove the seeds)1 unit(s)

- Black peppercorns4 unit(s)
- cardamom seed1 unit(s)
- orange zest. to taste

- de nata (fresh cream)200 g

- In a large pot, place the wine, sugar and spices, bring to a boil.
- Add the peeled pears and cook for 15 minutes. or until soft.
- When they are cooked, remove the pan from the heat and let it rest.
- Before serving, drain the pears and return the syrup to the heat, let it reduce until it has a syrupy consistency, strain and reserve.
- Whip the ice cream with the vanilla seeds and sugar to obtain the whipped cream.
- Assemble the plate making a "bed" with the whipped cream, place the pear and on top of it a good spoonful of syrup.
- This recipe can be made overnight.
- Once cooked, store the pears in the fridge in the syrup itself and when serving, follow the process in the same way.
