- Ripe fig4 cup
- Apple Peels1 cup
- Xylitol100 g
- Demerara or coconut sugar3 tablespoon
- Lemon Juice1/2 unit(s)
- First, remove the ends of the fig. Then cut them into cubes. Beat half in the processor. Reserve. In a pan over low heat, add the beaten fig and the rest of the figs in pieces. Mix together with the demerara the xylitol. When it is homogeneous, add the lemon juice and stir some more. You will notice that the jelly immediately changes color. This is because lemon juice regulates the pH of the fruit mixture with the chosen sugar. This is important because the jelly consistency is only achieved when the pH is between 3.5! Is ready! Allow to cool and store in a closed glass jar in the fridge for 15 days or in the freezer for 3 months.
