- Egg Yolk15 unit(s)
- FRESH grated coconut1 cup
- Crystal or demerara sugar1 cup
- Butter3 tablespoon
- In a bowl, mix the sugar with the grated coconut and the soft butter until it becomes a dough. Cover with plastic and refrigerate for an hour.
- Meanwhile, separate one by one, the 15 gems
- After an hour in the fridge, add the yolks to the dough and gently mix until the ingredients are uniform.
- Put the oven to heat to 180 degrees 3 place the dough in a pudding mold greased with butter and sprinkled with plenty of sugar
- Bake in a bain-marie for 45 minutes in an electric oven or 90 minutes in a gas oven.
- Remove from the oven and let it cool for 30 minutes, after that loosen the edges carefully so as not to crack the quindim and turn the dessert onto a plate.
- Take it to the fridge for +- 3 hours to get very cold and serve immediately.
- Note: if you use crystal sugar it is very yellow, if you use demerara sugar (as I did) the quindim is very yellow
