- First, hydrate the gelatin with 8 tablespoons of water and set aside.
- Place the cream, vanilla essence and 250g caster sugar in a pan and bring to a boil over low heat. (Just enough to mix everything together and get smooth).
- Place the hydrated gelatin in the microwave for 15 seconds. Then remove and mix with the cream from the pan.
- Put it in pie shapes or half cups (if serving in the cup itself) and take it to the fridge for at least 4 hours.
- To make the red fruit syrup, just put all the fruit in a pan with 200g of refined sugar and leave it on low heat. Stir constantly to melt the sugar and thicken the broth. When it's good, turn off the heat and add lemon little by little to get acidity. Lemon is to taste. I usually use half a lemon. If you don't think it's too sweet (because the amount of sugar changes a lot depending on the fruit) you can add it to taste.
- To serve, unmold the panna cotta by running a very thin knife along the side of the panna cotta (to loosen it) and then turning it over on a plate. Place the berries on top. If serving in a glass, just put the red fruits inside.
- Decorate with mint leaves and strawberries cut in half or in 3 parts.
